Strawberries and greenhouse tomatoes share a season and, it turns out, a language. Honeycomb rounds the acidity; a single vanilla pod per batch holds everything still. Savoury, then sweet, then quiet.

  • Strawberry juice
  • Slow-roasted tomato
  • Honeycomb
  • Whole vanilla pod
  • Filtered Rotterdam water
Serve
10 °C. Let it sit two minutes after pouring.
Glassware
Wide-mouthed wine glass to open the vanilla.
Format
Unpasteurised, non-alcoholic. Twelve months chilled.

From the room

Pressed cold, infused whole and left in steel for between three and six weeks. Nothing is heated, nothing is filtered bright, and the batch number on the back label is written by hand on the day of filling.
